Roasted coffee outgasses for days and stales in weeks. The valve, the barrier and the matte finish are three answers to three different problems.
Freshly roasted coffee releases carbon dioxide for several days after roasting. Seal it in an airtight bag without a valve and the bag inflates and eventually bursts; leave the bag open to vent and oxygen walks in and stales the coffee. The one-way degassing valve exists to solve exactly this contradiction, and it is not optional on whole bean.
The barrier requirement follows from the shelf life you promise. A local roaster selling through in three weeks can use a modest structure and even a recycle-ready mono-material laminate. A brand shipping to national retail with a twelve-month code date needs a metallized or foil structure, because oxygen and light strip the aromatics that are the whole reason the coffee costs what it costs.
Aesthetically, this is the category that made matte film the default premium signal. A matte laminate with a spot-gloss logo, a kraft-paper outer web or a soft-touch varnish reads as craft in a way a glossy metallized bag does not — and it costs very little more.

Less urgently than for whole bean, because ground coffee degasses much of its CO₂ before packing, but many roasters still specify one. For whole bean packed within days of roasting, a valve is effectively mandatory.
A mono-material PE or PP laminate is recycle-ready in store drop-off streams and works well for shelf lives up to a few months. For a twelve-month national programme the barrier trade-off is currently real, and we will show you the numbers rather than sell you a claim.
A five-panel pouch that stands squarely with two side gussets and a flat base — the format most speciality roasters have moved to. It presents better on shelf than a doypack, holds more per footprint, and gives you two side panels for origin storytelling.
